This red wine which was produced in a very good year of 2022 is a blend of Rondo and Orion (White) grapes. Part on their skins in open vats for 12 days, and part Maceration carbonic with the free run must (juice) being collected in 150 liter tanks and the gently pressed Must (juice) collected in 100 liter tanks. This is a true 'Terroir' wine. Meduim full in flavor with hints of wild blackberry and bay leaf, soft and fruity yet the tannin's are evenly structured throughout the wine.
Food Pairings – excellent with traditional roast meats (both red and poultry). Pairs well with grilled salmon or sea trout. Also an excellent accompaniment with traditional Irish farmhouse cheeses.
Winemaker’s Tip – open and decant** for two hours before serving. Serve at 18-19 degrees Celsius in wide Burgundy-style wine glasses for best experience.
