The Caora Fíniúna Waterford Red Wine, a Rondo and Regent blend harvested in mid-October, earned silver at the 2024 Blas na hÉireann Awards.
The wine is crafted using a blend of techniques: part is fermented on the skins in open vats for 12 days, while part undergoes carbonic maceration. The free-run juice is collected in 150-liter tanks, and the gently pressed juice is collected in 100-liter tanks. This true ‘terroir’ wine offers medium-full flavors with hints of wild blackberry and bay leaf. It is soft and fruity, with well-structured tannins throughout.
Food Pairings – Caora Fíniúna Red Wine is excellent with traditional roast meats (both red and poultry). It pairs well with grilled salmon or sea trout, also an excellent accompaniment to traditional Irish farmhouse cheeses.
Winemaker’s Tip – David suggests opening and decanting** this wine two hours before serving. For the best experience, serve at 18-19°C in wide Burgundy-style glasses.

Winemaker's Footnote - Enjoy on release or allow it to mature until 2026. It is sealed with a 45mm Portuguese cork, ideal for aging.
