This red wine which was produced in an exceptional year of 2018 is a blend of Rondo and Pinot Noir grapes. Fermented on their skins in open vats for 12 days with the free run must (juice) being collected in 150 litre tanks and the gently pressed Must (juice) collected in 100 litre tanks. This is a true 'Terroir' wine. Full in flavour with hints of wild blackberry and bay leaf, soft and fruity yet the tannin's are evenly structured throughout the wine.
Food Pairings – excellent with traditional roast meats (both red and poultry). Pairs well with grilled salmon or sea trout. Also an excellent accompaniment with traditional Irish farmhouse cheeses.
Winemaker’s Tip – open and decant** for two hours before serving. Serve at 18-19 degrees Celsius in wide Burgundy-style wine glasses for best experience.

Winemaker's Footnote - first batch bottled in March 2021, drinking now and maturing up to 2028. Using real Portuguese cork, 45mm in length so perfect for aging.
