This unique Irish wine was produced with a blend of Solaris and Seyval Blanc grapes which were naturally fermented in stainless steel tanks. Dry and steely displaying tropical fruit tones, hints of lychees and red grapefruit with a soft clean lingering finish. This wine is bottled off its secondary lees which will add an interesting mouth feel
Food Pairing – Try with shellfish & seafood, pork, roast white meats, mild Asian food, vegetarian dishes. Also works as an accompaniment to traditional Irish farmhouse cheeses.
Winemaker’s Tip – decant one hour before consuming and serve at 11 degrees Celsius.
Winemaker’s Footnote – bottled in August 2020 however ready for drinking now. Maturing potential up to 2025. I have older bottles from the 2014, 2016 and 2016 vintage which are still maturing with the 2016 taking on honey overtones. Real 44/45mm cork direct from Portugal used on this wine which is perfect for aging.
